POMEGRANATE PARFAIT WITH DRIED FRUITS

INGREDIENTS
  • 2 cups Greek yogurt
  • 1 cup pomegranate seeds
  • 1/4 cup honey
  • 1/2 cup granola
  • 1/4 cup dried apricots, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup dried figs, chopped
  • 1/4 cup sliced almonds (optional)
  • fresh mint leaves for garnish
PREPARATION METHOD

In a bowl, mix together Greek yogurt and honey until well combined. Set aside. In serving glasses or bowls, layer the parfait. Start with a spoonful of the Greek yogurt mixture at the bottom of each glass.

Add a layer of pomegranate seeds on top of the yogurt mixture. Sprinkle a layer of granola over the pomegranate seeds. Add a layer of mixed dried fruits (apricots, cranberries, and figs) on top of the granola.

Repeat the layers until the glasses are filled, ending with a layer of yogurt mixture. Top each parfait with a sprinkle of sliced almonds, if using.
