Cabrera Pizza

INGREDIENTS

For the Pizza Dough:
– 2 ¼ teaspoons (1 packet) active dry yeast
– 1 teaspoon granulated sugar
– 1 ½ cups warm water (around 110°F/45°C)
– 3 ½ cups all-purpose flour
– 2 tablespoons olive oil
– 1 teaspoon salt

For the Pizza Toppings:
– 1 cup marinara sauce
– 2 cups shredded mozzarella cheese
– 1 cup cooked and crumbled chorizo sausage
– 1 cup sliced bell peppers (red, green, and/or yellow)
– ½ cup sliced black olives
– ½ cup sliced red onions
– ½ cup sliced mushrooms
– 1 tablespoon chopped fresh cilantro (optional)
– 1 teaspoon dried oregano
– Salt and black pepper to taste
– Grated Parmesan cheese for garnish (optional)

PREPARATION METHOD

1. Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet in the oven to heat up.

2. In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

3. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.

4. Turn the dough out onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.

5. Divide the dough into two equal portions. Roll each portion into a ball and let them rest on the floured surface, covered with a clean kitchen towel, for about 10-15 minutes.

6. Take one dough ball and roll it out into a circle, about 12 inches in diameter, on a piece of parchment paper.

7. Spread half of the marinara sauce evenly over the rolled-out dough, leaving a small border around the edges.

8. Sprinkle half of the shredded mozzarella cheese over the sauce, followed by half of the cooked chorizo sausage, sliced bell peppers, black olives, red onions, and mushrooms.

9. Season the toppings with dried oregano, salt, and black pepper to taste. Sprinkle with chopped cilantro if desired.

10. Carefully transfer the pizza (on the parchment paper) onto the preheated pizza stone or baking sheet in the oven.

11. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.

12. Remove the pizza from the oven and let it cool for a few minutes before slicing. Repeat the process with the remaining dough and toppings to make the second pizza.

13. Once sliced, garnish with grated Parmesan cheese if desired, and serve hot. Enjoy your Cabrera Pizza!
