For the cake
- 110g Butter
- 200g Sugar

- 2 tbsp Lemon Juice

- 225g Cream Cheese
- 113g Butter
- 200g Confectioners’ Sugar
- 2 tbsp Lemon Juice

Preheat your oven to 175°C. Grease two 9-inch round cake pans, then line the bottoms with parchment paper. Grease the parchment as well to ensure easy removal after baking.
Cream the softened butter and granulated sugar together in a large bowl. Beat for 5-7 minutes until light and fluffy. Add eggs one at a time, mixing well after each addition. Incorporate lemon zest and juice.
In a separate bowl, combine sour cream and milk. Whisk together flour, baking powder, baking soda, and salt in another bowl. Alternate adding the dry mixture and wet ingredients into the creamed butter mixture.
When alternating flour and milk mixtures, mix until just combined. Overmixing will develop gluten, which could make the cake dense. Keep it gentle to maintain a light, airy texture.
Divide the batter evenly between the two prepared pans. Bake for 24-28 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes.
Carefully turn the cakes out onto wire racks to finish cooling. Remove the parchment paper from the cakes. Let them cool completely before adding syrup and frosting.
In a small saucepan, combine sugar and lemon juice. Heat over medium heat, stirring occasionally. Boil the mixture until it reduces by half. Set it aside to cool slightly before use.
Beat room-temperature cream cheese and butter in a mixing bowl until smooth. Gradually add confectioners’ sugar, lemon juice, and a pinch of salt, mixing until fully incorporated and creamy.
Once the cakes have cooled, use a serrated knife to slice each layer in half horizontally. This creates four thinner layers for easier syrup and frosting application.
Brush the cut sides of each cake layer generously with the lemon syrup. This infuses each layer with added moisture and a burst of tangy lemon flavor. Let them cool completely.
Place one cake layer on a serving platter. Spread a thick layer of frosting on top. Repeat this process with the remaining cake layers, frosting in between each layer.
Once all layers are stacked, apply a crumb coat by spreading a thin layer of frosting over the entire cake. Refrigerate for 30 minutes to set the crumb coat.
After the crumb coat has set, spread the remaining frosting smoothly over the top and sides of the cake. This will create a polished, smooth finish.
For an extra beautiful touch, decorate the top of the cake with lemon slices or edible flowers like violets or nasturtiums. These will enhance the cake’s presentation.
