1. Preheat your oven to 180°C (350°F). Grease the muffin tins with non-stick spray.
2. In a large bowl, beat the eggs, powdered sugar, and vanilla for 3-4 minutes until the mixture becomes frothy. Add the yogurt and mix well. Finally, add the flour and baking powder, mixing until you have a smooth batter.
3. Divide the batter evenly among the muffin tins, filling each about 3/4 full. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool slightly before removing them from the tins, then let them cool completely on a wire rack.
4. To make the vanilla frosting, mix the plain cream cheese with the vanilla powdered sugar at medium speed until smooth and creamy, with no sugar granules felt. Spoon the frosting into a piping bag or a sturdy kitchen bag with one corner cut off.
5. Decorate the cooled cupcakes with the frosting and add any additional decorations you like.
