Turkey Salad with Glazed Carrots



#### Ingredients:
– 300g cooked turkey breast, shredded or cubed
– 2 cups mixed salad greens (lettuce, arugula, spinach, etc.)
– 1 cup cherry tomatoes, halved
– 1/2 cucumber, sliced
– 1/4 red onion, thinly sliced
– 1/4 cup toasted walnuts or pecans, chopped (optional)
– Fresh parsley or dill for garnish

#### For the Glazed Carrots:
– 2 large carrots, peeled and sliced into thin rounds
– 1 tablespoon butter
– 1 tablespoon honey or maple syrup
– Salt and pepper to taste

#### For the Dressing:
– 3 tablespoons olive oil
– 1 tablespoon balsamic vinegar or red wine vinegar
– 1 teaspoon Dijon mustard
– 1 clove garlic, minced
