Sweet bread with bananas

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 eggs
  • 1/3 cup sugar
  • 1/3 cup heavy cream
  • 1/4 cup unsalted butter (melted)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mashed ripe bananas (approximately 1 large banana)
  • 1/2 cup chopped nuts
  • powdered sugar (for serving)

Gather the ingredients. Place the steamer rack in the Instant Pot and add 1 1/2 cups of water. Grease a 6-inch round pan and set it aside.

In a medium bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. In another bowl, mix the eggs, sugar, heavy cream, melted butter, and vanilla extract.

Stir in the mashed banana. Add the dry ingredients to the wet ingredients and mix to combine. Fold in the chopped nuts. Transfer the batter to the prepared pan and cover with aluminum foil. Place the pan on the steamer rack.

Secure the lid. Press the Manual button and cook on high pressure for 40 minutes. After pressing the start button, it will take a few minutes for the Instant Pot to preheat before the cooking timer begins.

Once the cooking time has elapsed, use the quick-release method to release the steam. Be careful as the steam release valve will release a continuous flow of hot steam. The float valve will drop when the pressure has been completely released, and it’s safe to open the lid.

Place the pan on a cooling rack and let it cool for 10 minutes. Flip the banana bread out onto the rack and allow it to cool completely before serving. For a nice presentation, dust with powdered sugar if desired.
