Strawberry mousse

INGREDIENTS
  • 700 g strawberries
  • 200 g powdered sugar
  • 1 tablespoon lemon zest
  • 4 fresh egg whites
  • 1 packet vanilla sugar
  • A pinch of salt
PREPARATION METHOD

Beat the egg whites with a pinch of salt until stiff peaks form. After 5 minutes, add the powdered sugar and vanilla sugar to the mixture.

Continue beating for another 4 minutes, ensuring the sugar is fully incorporated into the foam. This will create a smooth, glossy texture in the egg whites.

Remove the stems from the strawberries, wash them thoroughly, and drain them well. This step ensures the strawberries are clean and ready for blending.

Mash the strawberries with a blender until smooth. Once mashed, gently mix them into the egg white foam to create a fluffy, airy texture.

Add the lemon zest to the mixture, stirring everything together well. This adds a fresh, citrusy flavor to balance the sweetness of the strawberries and sugar.

Serve the strawberry foam chilled for the best texture and flavor. The cold foam is light, refreshing, and perfect as a sweet treat on a warm day.
