Sponge cake with lemon glaze

INGREDIENTS

For the Sponge Cake

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • zest of 1 lemon

For the Lemon Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed lemon juice
  • Zest of 1 lemon (optional, for extra lemon flavor)
PREPARATION METHOD

Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

In a large mixing bowl, beat the eggs and granulated sugar together with an electric mixer on high speed until light and fluffy. This may take about 4-5 minutes.

Reduce the mixer speed to low, and gradually add the melted and cooled butter to the egg-sugar mixture. Mix until well combined. Add the milk, vanilla extract, and lemon zest to the mixture, and mix until incorporated.

Gradually add the dry ingredients (flour, baking powder, and salt) to the wet ingredients, mixing until just combined. Be careful not to overmix.

Pour the cake batter into the prepared cake pan and smooth the top with a spatula. Bake the sponge cake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

In a small bowl, whisk together the powdered sugar and freshly squeezed lemon juice until you get a smooth glaze. Optionally, add the lemon zest to the glaze for an extra burst of lemon flavor.

Place the cooled sponge cake on a serving platter. Pour the lemon glaze over the top of the cake, allowing it to drizzle down the sides. Optionally, garnish the cake with additional lemon zest or a dusting of powdered sugar for added flavor and presentation.
