Spinach and cheese dumplings



– 8 ounces (about 225g) of dried rice noodles
– 1/4 cup creamy peanut butter
– 3 tablespoons soy sauce
– 2 tablespoons rice vinegar
– 2 tablespoons honey or maple syrup
– 1 tablespoon sesame oil
– 1 tablespoon grated ginger
– 2 cloves garlic, minced
– 1 teaspoon chili paste or Sriracha (adjust to taste)
– 1 bell pepper, thinly sliced
– 1 medium carrot, julienned
– 1 cup shredded cabbage
– 1/4 cup chopped green onions
– 1/4 cup chopped fresh cilantro
– 1/4 cup chopped roasted peanuts


1. Cook the rice noodles according to the package instructions. Drain and set aside.

2. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, grated ginger, minced garlic, and chili paste or Sriracha until smooth. Set aside.

3. Heat a large skillet or wok over medium-high heat. Add a bit of oil if needed.

4. Add sliced bell pepper, julienned carrot, and shredded cabbage to the skillet. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.

5. Add the cooked noodles to the skillet along with the prepared peanut sauce. Toss everything together until the noodles and vegetables are evenly coated with the sauce. Cook for another 2-3 minutes, stirring occasionally.

6. Once everything is heated through, remove the skillet from the heat.

7. Serve the spicy Thai peanut noodles hot, garnished with chopped green onions, fresh cilantro, chopped roasted peanuts, and lime wedges on the side for squeezing over the noodles if desired.
