Slowly candied orange slices

============

INGREDIENTS

2 large oranges
1 cup sugar
1 cup water
1 tablespoon lemon juice (optional, for added tartness)

PREPARATION METHOD

Prepare the Oranges:

Wash the oranges thoroughly. Cut off both ends and slice the oranges into thin, even slices (about 1/4-inch thick). You can remove any seeds as you go.
Blanch the Slices (optional):

If you want to reduce bitterness, blanch the slices. Bring a small pot of water to a boil. Add the orange slices and blanch for 1-2 minutes. Drain and set aside. This step is optional, but it helps mellow out the citrus flavor.
Make the Syrup:

In a large saucepan, combine the sugar, water, and lemon juice (if using). Stir the mixture over medium heat until the sugar dissolves and the syrup begins to simmer.
Candy the Orange Slices:

Add the orange slices to the simmering syrup. Reduce the heat to low and let the oranges cook gently for 1 to 2 hours. Turn the slices occasionally, making sure they are submerged in the syrup. The goal is to slowly candy the slices, so it’s important to keep the heat low to avoid burning the syrup.
Check Consistency:

After 1-2 hours, the syrup should have thickened, and the orange slices should be translucent and slightly golden. If you prefer a thicker syrup, continue cooking for a little longer, but don’t let it overcook.
Drying the Candied Orange Slices:

Carefully remove the candied orange slices from the syrup with a slotted spoon and place them on a wire rack or parchment paper. Let them cool and dry out for a few hours. If you want a more crystallized texture, you can sprinkle the slices with extra sugar while they’re still sticky.
Optional Final Touch:

Once cooled and dried, you can dip the edges of the candied orange slices in sugar for an extra sparkle or drizzle them with dark chocolate for a decadent treat.
Storage:
Store your candied orange slices in an airtight container at room temperature. They’ll last for up to a week, or you can freeze them for longer storage.

Enjoy these delightful, sweet, and citrusy treats!
