Savory Parmesan Olive Rigatoni

INGREDIENTS
  • 140 g parmesan
  • 90 g olives
  • 300 g pasta
  • 200 g tomatoes
  • 2 tablespoons olive oil
  • 5 g garlic
  • 100 ml vegetable stock
  • 1 tablespoon fresh basil
  • 1/2 teaspoon black pepper

Prepare parmesan, olive, garlic, herbs, cheese, and sauce ingredients before boiling the pasta. Cut vegetables or proteins evenly so they finish cooking at similar times, before moving to final serving.

Bring a large pot of salted water to a rolling boil. Add the pasta and cook until just al dente, reserving some cooking water before draining, before serving it immediately.

Heat olive oil in a wide pan, then cook aromatics until fragrant. Add ingredients requiring longer cooking first, stirring often enough to prevent scorching, so the texture stays pleasantly balanced.

Add parmesan and olive at the appropriate stage, cooking until tender or heated through. Control the heat so delicate ingredients keep texture and recognizable flavor, to keep the flavors balanced.

Stir in tomatoes, stock, cream, pesto, or other sauce components as appropriate. Simmer briefly until the sauce coats a spoon without becoming overly thick, for a polished and balanced result. Related: Fresh Tomato.

Add drained pasta directly to the sauce and toss thoroughly. Loosen with reserved cooking water as needed, helping the sauce cling evenly to every piece, for an evenly balanced finish.

Fold in Parmesan, herbs, citrus, butter, or olive oil away from the strongest heat. Taste and correct salt, pepper, acidity, or richness in small adjustments, to preserve the fresh texture.

Serve Savory Parmesan Olive Rigatoni at the proper temperature and with a restrained matching garnish. Store leftovers promptly, then reheat, chill, or refresh them according to the dish, before serving.
