Sand sponge cake

INGREDIENTS

– 300g potato starch
– 300g granulated sugar
– 300g softened butter
– 3 eggs at room temperature
– 1 vanilla bean
– 1/2 packet baking powder

PREPARATION METHOD

1. Preheat the oven to 160°C (320°F). Grease a springform pan and line it with parchment paper.

2. In a stand mixer, combine the softened butter and granulated sugar. Beat them together until you get a fluffy mixture.

3. Add the egg yolks one at a time, incorporating them gently into the mixture.

4. Sift the potato starch and baking powder together. Gradually add them to the mixture, ensuring no lumps form. Mix until well combined.

5. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold them into the mixture using a spatula, using slow and steady motions from bottom to top.

6. Pour the batter into the prepared pan, smoothing the top with a spatula.

7. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

8. Remove the sand cake from the oven and allow it to cool in the pan for a few minutes. Then, carefully remove it from the pan and transfer it to a wire rack to cool completely.

9. Once cooled, slice and serve. Enjoy your delicious sand cake!
