Rice with Saffron and Nuts



– 1 cup basmati rice
– 1 pinch saffron threads
– 2 tablespoons hot water
– 2 tablespoons butter or ghee
– 1/4 cup almonds, sliced or slivered
– 1/4 cup pistachios, chopped
– Salt to taste
– Fresh cilantro or parsley for garnish (optional)


1. **Prepare the Saffron:**
– In a small bowl, soak the saffron threads in hot water. Set aside for about 10-15 minutes to allow the saffron to infuse the water with its color and flavor.

2. **Cook the Rice:**
– Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.
– In a medium pot, bring 2 cups of water to a boil. Add a pinch of salt and the rinsed rice. Reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice simmer gently for 15-20 minutes, or until the rice is tender and the water is absorbed.
