1. Prepare the dough: In a large bowl, mix warm water, yeast, and sugar. Let it sit for 5 minutes to activate the yeast. Add flour, salt, and butter.
2. Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Cover it and let it rise for 1 hour.
3. Shape the pretzels: Preheat the oven to 450°F (230°C). Punch down the dough and divide it into 8 portions. Roll each portion into a rope and shape into a pretzel.
4. Boil the pretzels: Bring a large pot of water to a boil. Add baking soda. Carefully drop each pretzel into the water for 30 seconds, then remove with a slotted spoon.
5. Bake the pretzels: Place the boiled pretzels on a baking sheet lined with parchment paper. Sprinkle with sesame or poppy seeds and coarse salt. Bake for 12-15 minutes.
