INGREDIENTS

- 100g dried porcini mushrooms
- 2 cups warm water
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon fresh parsley, chopped
- Salt and pepper to taste
- Mixed salad greens (optional)
Soak the dried porcini mushrooms in warm water for about 30 minutes until they soften. Drain them well and reserve the soaking liquid for later use.
Heat olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, then add the porcini mushrooms and cook for 5 minutes.
Pour a few tablespoons of the reserved soaking liquid into the pan with mushrooms to enhance flavor. Cook for another 3 minutes, then remove from heat and cool slightly.
In a bowl, mix the mushrooms with lemon juice, chopped parsley, salt, and pepper. Toss gently with salad greens if desired, then serve fresh as a light starter or side dish.
