Pancakes with honey and berries

INGREDIENTS
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh mixed berries
  • 2 tablespoons honey
PREPARATION METHOD

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix until all dry ingredients are evenly blended throughout.

In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract. Stir until the mixture is smooth and well combined.

Pour the wet mixture into the dry ingredients. Stir gently with a spoon until just combined. Do not overmix, a few lumps are perfectly fine.

Heat a non-stick skillet over medium heat. Lightly grease it with butter or oil. Pour 1/4 cup of batter onto the skillet for each pancake.

Cook pancakes until bubbles form on the surface and edges look set, then flip. Cook another minute or until golden brown and cooked through.

Stack the pancakes on a plate. Drizzle generously with honey and top with fresh berries. Serve immediately for a warm, sweet, and fruity breakfast treat.
