Rice pudding with vanilla and oranges

INGREDIENTS
    1 cup long-grain white rice
    4 cups whole milk
    1/2 cup granulated sugar (adjust to taste)
    1 vanilla bean or 1 teaspoon vanilla extract
    Zest of 1 orange (make sure it’s organic and unwaxed)
    1-2 tablespoons fresh orange juice
    Pinch of salt
    Orange slices and additional zest for garnish (optional)
PREPARATION METHOD

Rinse the rice under cold water until the water runs clear, draining any excess water.

In a medium-sized saucepan, combine the rinsed rice, milk, sugar, and a pinch of salt. If using a vanilla bean, split it open lengthwise and scrape out the seeds with a knife. Add both the seeds and the vanilla pod to the rice mixture. If using vanilla extract, do not add it yet.

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent the rice from sticking to the bottom of the pan.

Reduce the heat to low and let the rice cook slowly in the milk, stirring occasionally, until the rice is tender and the mixture has thickened to a creamy consistency. It may take about 25-30 minutes. If using vanilla extract, add it to the rice pudding once it’s cooked and remove the vanilla pod if you used a vanilla bean.

Stir in the orange zest and fresh orange juice to infuse the rice pudding with citrus flavor. Taste and adjust the sweetness to your preference by adding more sugar if needed.

Remove the saucepan from the heat and let the rice pudding cool slightly.

Serve the rice pudding warm or chilled in individual bowls or glasses. Garnish with orange slices and additional orange zest for a pop of color and extra citrus aroma.
