Mushrooms Gratin Stuffed with Spinach

INGREDIENTS
  • 8 large portobello mushrooms
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup heavy cream
PREPARATION METHOD

Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or non-stick cooking spray. Prepare your ingredients before starting to assemble the dish.

Clean the portobello mushrooms by wiping them with a damp paper towel to remove any dirt. Remove the stems and gently scrape out the gills with a spoon. Place the mushrooms in the prepared baking dish, gill-side up.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Make sure to avoid burning the garlic while cooking.

Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside for later use in the stuffing.

In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, chopped parsley, and shredded mozzarella cheese. Mix well to evenly distribute all ingredients throughout the mixture. This will be the topping for the mushrooms.

Spoon the spinach mixture evenly into each mushroom cap, filling them up completely. Be sure to stuff the mushrooms generously for the best flavor and texture in each bite.

Sprinkle the breadcrumb mixture over the stuffed mushrooms, pressing gently to adhere. This will form a crunchy topping that complements the soft mushrooms and creamy filling.

Drizzle the heavy cream over the stuffed mushrooms. The cream will add richness and help achieve a golden, crispy texture when baked in the oven.

Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the topping is golden brown and crispy. Keep an eye on them to ensure they don’t overcook.
