INGREDIENTS
- 2 cups cooked beans (any variety)
- 1 large onion, thinly sliced
- 2 tablespoons olive oil or butter
- Salt to taste
- Black pepper to taste
- 1 teaspoon garlic powder (optional)
- Fresh parsley or cilantro for garnish (optional)
Heat olive oil or butter in a skillet over medium heat. Add the sliced onions and sauté slowly until they turn golden brown and fragrant, about 10 minutes.
While the onions cook, mash the cooked beans in a bowl until smooth but still slightly chunky, seasoning with salt, pepper, and garlic powder if using.
Once onions are ready, mix half of them into the mashed beans, reserving the rest for garnish. Adjust seasoning and stir well to combine flavors.
Serve the mashed beans warm, topped with the remaining sautéed onions and a sprinkle of fresh parsley or cilantro for a bright, fresh finish.
