INGREDIENTS

**For the Lemon Curd:**
– 4 large eggs
– 1 cup granulated sugar
– 1/2 cup fresh lemon juice (about 4 lemons)
– 1/2 cup unsalted butter, cubed
– 1 tablespoon lemon zest (from about 2 lemons)

**For the Mascarpone Cream:**
– 1 cup mascarpone cheese
– 1 cup heavy cream
– 1/4 cup granulated sugar
– 1 teaspoon vanilla extract

**For the Ladyfingers:**
– 24-30 ladyfinger biscuits (Savoiardi)
– 1 cup lemon juice (for soaking)
– 1/4 cup limoncello (optional, for added flavor)

**For Assembly:**
– Lemon zest (for garnish)
– Fresh berries (optional, for garnish)
– Mint leaves (optional, for garnish)

PREPARATION METHOD

1. **Make the Lemon Curd:**
1. In a medium saucepan, whisk together the eggs, sugar, and lemon juice until well combined.
2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10-15 minutes).
3. Remove from heat and stir in the butter and lemon zest until the butter is fully melted and the mixture is smooth.
4. Strain the lemon curd through a fine-mesh sieve into a bowl to remove any cooked egg bits.
5. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Refrigerate until completely cool.

2. **Prepare the Mascarpone Cream:**
1. In a large bowl, beat the mascarpone cheese, heavy cream, sugar, and vanilla extract together until stiff peaks form. Be careful not to overbeat.

3. **Assemble the Tiramisu:**
1. In a shallow dish, combine the lemon juice and limoncello (if using).
2. Quickly dip each ladyfinger into the lemon juice mixture, making sure not to soak them for too long.
3. Arrange a layer of soaked ladyfingers in the bottom of a 9×13 inch dish or a similar-sized serving dish.
4. Spread half of the mascarpone cream over the ladyfingers.
5. Spread half of the lemon curd over the mascarpone cream layer.
6. Repeat the layers with the remaining ladyfingers, mascarpone cream, and lemon curd.

4. **Chill and Serve:**
1. Cover the assembled tiramisu with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
2. Before serving, garnish with lemon zest, fresh berries, and mint leaves if desired.
