Begin by mixing the spices—thyme, sage, rosemary, and sweet paprika—with oil in a bowl. This will create a flavorful paste. Adjust the seasoning to taste with salt and pepper.
Chop the green garlic finely and spread it evenly on the bottom of a greased, oven-safe dish. This will form a flavorful base for the lamb leg to rest upon during cooking.
Generously rub the lamb leg with the prepared spice paste, making sure it’s fully coated. Place the seasoned lamb on top of the garlic in the greased dish to enhance the flavor.
Combine the tomato paste with the red wine, stirring until well blended. Pour this mixture evenly over the lamb leg, ensuring it’s fully covered. This adds richness to the roast.
Preheat the oven to 180°C (350°F). Place the lamb leg into the oven and cook for 30 minutes. After this, flip the lamb pieces to ensure even cooking and tenderness.
After an additional 30-45 minutes in the oven, the lamb will be perfectly roasted. Serve with a side of vegetables or salad of your choice for a complete meal.
