Lamb soup with potatoes

INGREDIENTS
  • 1.5 pounds lamb shoulder, cubed
  • 4 large potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 6 cups beef or vegetable broth
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Heat olive oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides for about 5-7 minutes.

Once the lamb is nicely browned, remove it and set aside. In the same pot, sauté the chopped onion and garlic until soft and fragrant.

Return the lamb to the pot. Add carrots, potatoes, and dried thyme. Stir everything together so the flavors begin to combine evenly. Related: Chicken Soup.

Pour in the broth and bring the soup to a boil. Reduce heat, cover, and let it simmer gently for about 60 minutes until tender. Related: tomato soup.

Season the soup with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired. Perfect with crusty bread on the side.
