Gulab Jamun Doughnuts

INGREDIENTS

For the doughnuts:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 3/4 cup milk
  • Oil for frying

For the Gulab Jamun filling:

  • 1 cup milk powder
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 2 tablespoons ghee (clarified butter)
  • 2-3 tablespoons milk or water (as needed to form a dough)
  • 1 tablespoon chopped nuts (optional)
  • 1 tablespoon rose water
  • 1 cup sugar
  • 1 cup water
  • 4-5 cardamom pods, crushed
PREPARATION METHOD

In a bowl, mix together milk powder, all-purpose flour, and baking powder. Add ghee to the mixture and mix until it resembles bread crumbs. Gradually add milk or water, a little at a time, and knead until it forms a smooth dough. Add chopped nuts if using, and knead the dough gently to incorporate. Divide the dough into small equal-sized balls and keep aside.

In a saucepan, combine sugar, water, and crushed cardamom pods. Bring it to a boil, stirring until the sugar dissolves completely. Simmer the syrup for 5-7 minutes until it slightly thickens. Remove from heat, add rose water, and set aside to cool.

In a large mixing bowl, sift together flour, sugar, baking powder, baking soda, and salt. Add melted butter and milk to the dry ingredients, and mix until a soft dough forms. Knead the dough gently on a floured surface for a few minutes until smooth. Divide the dough into small equal-sized portions.

Flatten each portion of dough and place a Gulab Jamun ball in the center. Wrap the dough around the Gulab Jamun, sealing it completely. Roll the filled doughnuts gently between your palms to form smooth balls.

Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the filled doughnuts, a few at a time, and fry until they turn golden brown, turning occasionally. Remove the fried doughnuts using a slotted spoon and drain excess oil on paper towels.

While the doughnuts are still warm, dip them into the prepared sugar syrup, ensuring they are coated evenly. Let the Gulab Jamun Doughnuts soak in the syrup for at least 15-20 minutes to absorb the flavors.

Serve the Gulab Jamun Doughnuts warm or at room temperature. Optionally, garnish with chopped nuts or rose petals before serving.
