- 4 cups green apple juice (freshly squeezed)
- 2 cups tomato juice (freshly squeezed)
- 2 cups granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon grated green apple zest (optional)
Wash and peel the green apples. Remove the cores and cut them into chunks. Use a juicer to extract the juice from the green apples. Strain the juice to remove any pulp.
Repeat the process with tomatoes, extracting fresh tomato juice. In a large, heavy-bottomed pot, combine the green apple juice and tomato juice.
Stir in the granulated sugar until it dissolves completely. Place the pot over medium heat and bring the mixture to a boil. Stir frequently to prevent sticking.
Once it reaches a boil, reduce the heat to low and let the mixture simmer. Stir occasionally to prevent burning. After simmering for about 15 minutes, add the lemon juice to enhance the flavors. Stir well.
Continue simmering until the mixture thickens to a jam-like consistency. This may take approximately 30-40 minutes. To check if the jam is ready, place a small amount on a chilled plate. If it wrinkles when touched, it’s ready.
If desired, stir in the grated green apple zest for an extra burst of flavor. Allow the jam to cool slightly before transferring it to sterilized jars. Seal the jars tightly.
Once the jam has fully cooled and set, enjoy it on toast, crackers, or as a delightful accompaniment to cheese. Store the Green Apple and Tomato Juice Jam in a cool, dark place. Refrigerate after opening.
