- 1 large pita bread, cut into halves
- 1 cup cooked chickpeas, mashed
- 1 small onion, finely chopped
- 1 cup spinach, chopped
- 1/4 cup tahini
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
In a bowl, mix mashed chickpeas, chopped onion, spinach, tahini, cumin, paprika, garlic powder, salt, and pepper. Combine well until the mixture is smooth and flavorful.
Preheat the grill or a skillet over medium heat. While waiting, cut the pita bread into halves and gently open the pockets. Brush each side with olive oil.
Stuff the pita halves with the chickpea mixture, making sure the filling is evenly distributed. Press down slightly to ensure the filling stays in place while grilling.
Place the stuffed pita halves on the grill or in the skillet. Cook each side for 3-5 minutes until the bread is golden and crispy.
Once golden, remove the Arayes from the grill and let them cool for a minute. Slice them into triangles for easy serving.
