_______
**For the Chocolate Cake:**
– 1 ¾ cups all-purpose flour
– 2 cups granulated sugar
– ¾ cup unsweetened cocoa powder
– 1 ½ teaspoons baking powder
– 1 ½ teaspoons baking soda
– 1 teaspoon salt
– 2 large eggs
– 1 cup whole milk
– ½ cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup boiling water
**For the Berries Cream:**
– 1 cup mixed berries (strawberries, blueberries, raspberries)
– 2 tablespoons granulated sugar
– 1 teaspoon lemon juice
– 2 cups heavy cream
– ½ cup powdered sugar
– 1 teaspoon vanilla extract
**For Garnish:**
– Fresh berries
– Chocolate shavings or curls
**Prepare the Chocolate Cake:**
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
4. Stir in the boiling water until the batter is well mixed. The batter will be thin.
5. Pour the batter evenly into the prepared cake pans.
6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
**Prepare the Berries Cream:**
1. In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens (about 5-7 minutes). Let it cool completely.
2. In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
3. Gently fold the cooled berry mixture into the whipped cream until well combined.
**Assemble the Cake:**
1. Place one of the chocolate cake layers on a serving plate.
2. Spread a thick layer of the berries cream on top of the first layer.
3. Place the second cake layer on top of the berries cream.
4. Spread the remaining berries cream over the top and sides of the cake.
**Garnish:**
1. Decorate the top of the cake with fresh berries and chocolate shavings or curls.
2. Refrigerate the cake for at least 1 hour before serving to let the flavors meld and the cream set.
