- 1 lb ground chicken
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1/4 cup shredded carrots
- 1/4 cup chopped green onions
- 1 tbsp sesame seeds
- 1 head of butter lettuce
- 1/2 cup lime wedges
1. Heat the olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it up with a spoon. Drain excess fat.
2. Add the chopped onion and garlic to the skillet with the chicken. Sauté for 2-3 minutes until softened. Stir occasionally to avoid burning the garlic.
3. Stir in the soy sauce, hoisin sauce, and rice vinegar. Let the mixture simmer for 5-7 minutes, allowing the flavors to meld together. Stir occasionally.
4. Once the sauce has thickened, add the shredded carrots and chopped green onions. Cook for an additional 2 minutes, allowing the vegetables to soften slightly.
5. To assemble, separate the butter lettuce leaves and arrange them on a large plate. Spoon the chicken mixture into the center of each leaf.
