Chicken noodle soup

INGREDIENTS

– 1 whole chicken (approximately 1 kg)
– 1 small celery root (celeriac)
– 3 carrots
– 1 parsnip
– 1 onion
– 1 red bell pepper
– Fresh parsley
– Salt to taste
– 200 g noodles of your choice

PREPARATION METHOD

1. **Prepare the Ingredients:**
– Rinse the chicken thoroughly under cold water and pat it dry with paper towels. Cut it into pieces, such as legs, thighs, wings, and breast.
– Peel and chop the celery root, carrots, parsnip, onion, and red bell pepper into small pieces.
– Finely chop the fresh parsley.

2. **Cooking the Soup:**
– In a large pot, add the chicken pieces and cover them with water. Bring to a boil over high heat.
– Skim off any foam that rises to the surface. Reduce the heat to low, cover the pot, and let the chicken simmer for about 30 minutes or until it’s cooked through and tender.
– Once the chicken is cooked, remove it from the pot and set it aside to cool slightly. Strain the chicken broth to remove any impurities and return it to the pot.

3. **Adding Vegetables:**
– Bring the strained chicken broth back to a simmer over medium heat. Add the chopped celery root, carrots, parsnip, onion, and red bell pepper to the pot.
– Let the vegetables cook in the broth for about 15-20 minutes or until they are tender.

4. **Shredding the Chicken:**
– While the vegetables are cooking, shred the cooked chicken meat using a fork or your hands, discarding the bones and skin.

5. **Completing the Soup:**
– Once the vegetables are tender, add the shredded chicken back into the pot.
– Season the soup with salt according to your taste preferences.
– Add the noodles to the pot and let them cook according to the package instructions or until they are al dente.
– Stir in the chopped parsley and let the soup simmer for an additional 5 minutes to allow the flavors to meld together.

6. **Serving:**
– Once the noodles are cooked, remove the pot from the heat. Ladle the chicken noodle soup into bowls and serve hot.
