The Fluffiest Cake Sponge

INGREDIENTS

For the Cake Sponge

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 tablespoon pure vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the Fluffy Frosting

  • 1 1/2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
PREPARATION METHOD

Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans. In a large mixing bowl, combine the softened butter and granulated sugar.

Cream them together until the mixture is light and fluffy. This should take about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.

Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix. The batter should be smooth. Divide the batter equally between the two prepared cake pans.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and transfer them to a wire rack to cool completely.

While the cakes are cooling, prepare the fluffy frosting. In a chilled mixing bowl, whip the heavy cream until it starts to thicken. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Be careful not to overwhip.

Once the cakes are completely cooled, spread a layer of the fluffy frosting on top of one of the cake layers. Place the second cake layer on top and cover the entire cake with the remaining fluffy frosting.

You can decorate the cake as desired with sprinkles, fresh fruit, or edible flowers. Slice and enjoy your delicious and fluffy cake sponge!
