
For the cake
- 4 tbsp all-purpose flour
- 6 tbsp granulated sugar
- 2 tbsp cocoa powder
- 6 eggs
- 1/2 tsp baking powder
For the apple filling
- 1 kg grated apples
- 1 packet Golden Star pudding powder
- 200 ml water
- 1 packet vanilla sugar
For the pudding filling
- 1 liter milk
- 2 packets Golden Star pudding powder
- 2 tbsp plain flour
- 50 g butter
- 500 g smooth curd cheese (quark)
- 1 packet vanilla sugar
- 3 tbsp granulated sugar
Additional ingredients
- 300 g cookies
- 200 ml whipping cream
- 200 g dark chocolate
Separate the egg whites from the yolks. Whisk yolks with sugar until creamy. Sift flour, cocoa, and baking powder together, then fold into yolk mixture gently.
Beat egg whites into stiff peaks and carefully fold them into the batter. Pour into a greased large baking tray. Bake at 180°C (350°F) for about 20 minutes.
Grate apples and cook briefly until they start to boil. Dissolve the Golden Star pudding powder and vanilla sugar in water, then stir into the apples.
Cook the mixture until it thickens and starts boiling. Spread the warm apple filling over the cooled cake base and let it cool completely before adding the next layer.
Heat the milk in a saucepan. Mix some cold milk with pudding powder, flour, and sugar. Add this mixture to the hot milk and cook into pudding.
Remove from heat, stir in butter until melted. Immediately add the curd cheese and vanilla sugar. Mix thoroughly to combine and spread the pudding evenly over the cooled apple layer.
Arrange the cookies on top of the pudding layer. Prepare the ganache by heating whipping cream gently — do not boil — then melt the dark chocolate in it.
Pour the chocolate ganache over the cookies and spread evenly. Refrigerate the dessert until firm, preferably overnight, for best flavor and texture before serving.
