INGREDIENTS
  • 2 large eggplants
  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon smoked paprika
  • Fresh parsley, chopped for garnish
  • Pomegranate seeds for decoration (optional)

Preheat your oven to 400°F. Prick eggplants with a fork several times. Place them on a baking sheet and roast until tender, approximately 35 to 40 minutes.

Once roasted, allow the eggplants to cool. Peel off the skin carefully. Place the soft flesh into a mixing bowl. Remove any remaining seeds for a smoother texture.

Add tahini, olive oil, minced garlic, lemon juice, salt, and smoked paprika to the eggplant flesh. Mix thoroughly with a spoon or blender until smooth and creamy consistency develops. Related: Sesame salt.

Taste the mixture and adjust seasoning as needed. More lemon juice can enhance tanginess. More tahini or olive oil will give richer, silkier texture. Blend again if necessary.

Transfer the Baba Gannuj into a serving dish. Smooth the top with a spatula. Drizzle a little olive oil on top to add shine and extra flavor before garnishing. Related: Soft cake.

Sprinkle chopped parsley evenly over the dip. Optionally, add pomegranate seeds for a colorful, sweet, and slightly tart contrast. This makes it visually appealing and flavorful for guests.

Serve immediately with warm pita bread, fresh vegetables, or crackers. Baba Gannuj can also be refrigerated for a day to enhance flavors. Enjoy this classic Middle Eastern delight.
